Preparation
1. Prepare the Vegetables:
Start by washing the tomatoes and bell peppers. Carefully cut off the tops to create lids and set them aside. Scoop out the insides of the tomatoes using a spoon and reserve the pulp in a bowl. Remove the seeds from the peppers but keep them intact.
2. Make the Filling:
In a large pan, heat half of the olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the garlic, grated zucchini, and carrot, and cook for another 2-3 minutes. If you’re using ground meat, now is the time to add it to the pan. Cook until the meat is browned.
Next, add the rice to the pan and stir it into the mixture. Pour in the reserved tomato pulp, tomato paste, parsley, and mint. Season with salt and pepper. Stir everything well, then add a cup of water or vegetable broth. Let the mixture simmer for about 10 minutes, or until the rice has absorbed most of the liquid but is still slightly undercooked. This ensures it won’t become mushy during baking.
3. Stuff the Vegetables:
Preheat your oven to 180°C (350°F). Place the hollowed-out vegetables in a baking dish. Fill each tomato and pepper with the rice mixture, leaving a little room at the top because the rice will expand as it cooks. Place the lids back on each vegetable.
4. Bake the Gemista:
Drizzle the remaining olive oil over the stuffed vegetables and pour a little water or broth into the bottom of the baking dish to prevent sticking. Cover the dish with foil and bake for about 1 hour. After 30 minutes, remove the foil so the tops can brown slightly.
5. Serve and Enjoy:
Let the Gemista cool slightly before serving. This dish is traditionally enjoyed at room temperature, but it’s equally delicious warm. Serve it with a side of feta cheese and a slice of crusty bread to soak up the juices.
